Slimming Chicken Mozzarella Bombs

Ingredients

4 skinless chicken breasts

4 slices lean ham or turkey bacon (Syn-free if fat removed)

80g reduced-fat mozzarella (2 Healthy Extra A, or 6 Syns)

1 tsp dried oregano

1 tsp garlic granules

1 tsp smoked paprika

Salt & pepper, to taste

Low-calorie cooking spray

Method

Preheat oven to 190°C (fan 170°C).

Cut a pocket into each chicken breast without cutting all the way through.

Stuff each with 20g mozzarella. Season with oregano, garlic, paprika, salt, and pepper.

Wrap each breast with a slice of lean ham or turkey bacon to seal.

Place in a baking dish, spray lightly with low-calorie cooking spray, and bake for 25–30 minutes until chicken is cooked through and cheese is melted.
