Ingredients
For the crepes:
- 100g plain flour (16 Syns)
- 2 large eggs (Free)
- 250ml skimmed milk (part of Healthy Extra A, or 4 Syns)
- Pinch of salt
- Low-calorie cooking spray
For the filling (sweet option):
- 100g light cream cheese (4 Syns)
- 2 tbsp fat-free Greek yogurt (Free)
- 1 tsp sweetener (optional)
- ½ tsp vanilla extract
For the filling (savoury option):
- 100g light cream cheese (4 Syns)
- Fresh herbs (parsley, dill, or chives – Free)
- Salt & pepper to taste
- Optional: smoked salmon or lean ham (Free)
Method
- Whisk flour, eggs, milk, and salt until smooth.
- Spray a non-stick frying pan with low-calorie spray and heat.
- Pour in a thin layer of batter, cook 1–2 minutes until golden, flip, and cook the other side. Repeat with remaining batter.
- For the filling: mix cream cheese with yogurt, sweetener & vanilla (sweet) OR with herbs, salt & pepper (savoury).
- Spread filling on each crepe, roll or fold, and serve.
