🧁 Ingredients
Crust (low syn):
- 8 reduced-fat digestives (or Hifi bars)
- 2 tbsp light margarine (4 syns per tbsp)
Filling:
- 250g quark
- 200g fat-free Greek yogurt
- 150g light cream cheese (Philadelphia Lightest – 1 syn per 25g)
- 2 tbsp sweetener
- Zest & juice of 1 lemon
- 2 tsp gelatin powder (dissolved in 2 tbsp hot water)
Topping:
- 2 tbsp lemon curd (approx. 2 syns per tbsp)
- Optional: fat-free aerosol cream (1 syn per serving)
👩🍳 Instructions

Make crust:
- Crush digestives, mix with melted light margarine, and press into tin.
- Chill for 15–20 minutes.

Make filling:
- Mix quark, yogurt, cream cheese, lemon zest, juice, and sweetener.
- Stir in cooled gelatin.
- Pour over crust and smooth out.

Chill:
- Chill for at least 4 hours (or overnight) to set.

Top:
- Spread lemon curd on top just before serving.
- Add whipped topping and a lemon slice for presentation (optional).
