These bite-sized pancakes are soft, fluffy, and naturally sweetened with banana. Packed with protein from cottage cheese and eggs, and wholesome oats, they make a perfect kid-friendly breakfast or a healthy snack.
Ingredients (Makes ~12 bites)
- 1 ripe banana
- ยฝ cup cottage cheese
- 2 large eggs
- ยพ cup rolled oats
- ยฝ teaspoon baking powder
- ยผ teaspoon cinnamon
- ยผ teaspoon vanilla extract
- Pinch of salt
- Coconut oil or butter, for greasing

Preheat the Oven:
Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a mini muffin tin with coconut oil or butter. -
Prepare the Batter:
- In a blender or food processor, combine the banana, cottage cheese, and eggs. Blend until smooth.
- Add the rolled oats, baking powder, cinnamon, vanilla extract, and a pinch of salt. Blend again until well combined. The batter should be slightly thick but pourable.

Fill the Muffin Tin:
Spoon the batter into the prepared mini muffin tin, filling each cup about ยพ full. -
Bake:
Bake in the preheated oven for 15โ18 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean. -
Cool & Serve:
Allow the pancake bites to cool slightly in the tin before removing. Serve warm or store in an airtight container in the fridge for up to 4 days. -
