Ingredients (Makes ~12 bites)

  • 1 ripe banana
  • ยฝ cup cottage cheese
  • 2 large eggs
  • ยพ cup rolled oats
  • ยฝ teaspoon baking powder
  • ยผ teaspoon cinnamon
  • ยผ teaspoon vanilla extract
  • Pinch of salt
  • Coconut oil or butter, for greasing

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a mini muffin tin with coconut oil or butter.
  2. Prepare the Batter:
    • In a blender or food processor, combine the banana, cottage cheese, and eggs. Blend until smooth.
    • Add the rolled oats, baking powder, cinnamon, vanilla extract, and a pinch of salt. Blend again until well combined. The batter should be slightly thick but pourable.
  3. Fill the Muffin Tin:
    Spoon the batter into the prepared mini muffin tin, filling each cup about ยพ full.
  4. Bake:
