🧂 Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cups fresh spinach, chopped
  • 1 medium sweet potato, peeled and thinly sliced
  • 4 large eggs
  • ½ cup milk (or any unsweetened plant milk)
  • ½ cup crumbled feta cheese
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Optional: pinch of nutmeg or chili flakes for flavor

👩‍🍳 Directions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan.
  2. Make the crust:
    Layer thin slices of sweet potato across the bottom and sides of the dish, overlapping slightly.
    Brush lightly with olive oil and bake for 15 minutes until just tender.
  3. Sauté the veggies:
    Heat olive oil in a skillet over medium heat. Add onion and cook until soft.
    Add spinach and cook until wilted. Remove from heat and let cool slightly.
  4. Whisk the filling:
    In a bowl, whisk eggs, milk, salt, and pepper. Stir in feta and the spinach mixture.
  5. Assemble & bake:
    Pour filling into the pre-baked sweet potato crust.
    Bake 25–30 minutes until the center is set and lightly golden on top.
  6. Cool & serve:
    Let it rest 5–10 minutes before slicing. Enjoy warm or chilled!
