🧂 Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cups fresh spinach, chopped
- 1 medium sweet potato, peeled and thinly sliced
- 4 large eggs
- ½ cup milk (or any unsweetened plant milk)
- ½ cup crumbled feta cheese
- ¼ tsp salt
- ¼ tsp black pepper
- Optional: pinch of nutmeg or chili flakes for flavor
👩🍳 Directions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan.

Make the crust:
Layer thin slices of sweet potato across the bottom and sides of the dish, overlapping slightly.
Brush lightly with olive oil and bake for 15 minutes until just tender. -
Sauté the veggies:
Heat olive oil in a skillet over medium heat. Add onion and cook until soft.
Add spinach and cook until wilted. Remove from heat and let cool slightly. -
Whisk the filling:
In a bowl, whisk eggs, milk, salt, and pepper. Stir in feta and the spinach mixture. -
Assemble & bake:
Pour filling into the pre-baked sweet potato crust.
Bake 25–30 minutes until the center is set and lightly golden on top. -
Cool & serve:
Let it rest 5–10 minutes before slicing. Enjoy warm or chilled!
