Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Grease a 9-inch pie dish or baking pan lightly with olive oil or butter.
- Cook the Vegetables:
- In a skillet, heat a small amount of olive oil over medium heat.
- Add mushrooms, onions, and bell peppers. Sauté for 4–5 minutes until softened.
- Add the spinach and cook until wilted. Remove from heat and let cool slightly.
- Prepare the Egg Mixture:
- In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
- Assemble the Dish:
- Add the cooked vegetables and any optional diced ham/turkey to the egg mixture. Stir to combine.
- Pour the mixture into the greased baking dish.
- Sprinkle shredded cheese evenly over the top.
- Bake:
