Ingredients
Teriyaki Chicken Foil Packets
2 boneless, skinless chicken breasts
1 cup fresh pineapple chunks
¼ cup teriyaki sauce
1 tbsp olive oil
1 red bell pepper, sliced
1 carrot, thinly sliced
1 zucchini, sliced
2 green onions, chopped
Salt & black pepper, to taste
Aluminum foil for wrapping
Instructions
Preheat oven or grill
Preheat oven to 400°F (200°C) or heat grill to medium-high. Prepare large pieces of aluminum foil for each packet.
Prepare the chicken
Place chicken breasts in the center of each foil sheet. Drizzle with olive oil and season with salt and pepper.
Add vegetables and pineapple
Top chicken with pineapple chunks, bell pepper, carrot, zucchini, and green onions.
Add teriyaki sauce
Drizzle teriyaki sauce evenly over each packet, making sure everything is lightly coated.
Seal the foil packets
Fold the foil over the chicken and vegetables, sealing tightly to create packets.
Cook
Bake in the oven for 20–25 minutes or grill for 15–20 minutes, until chicken is fully cooked and tender.
Serve
Carefully open foil packets and serve warm. Spoon extra juices over the chicken for added flavor.
