Juicy chicken, sweet pineapple, and colorful veggies cooked together in a flavorful teriyaki steam-packet. A healthy, zero-cleanup dinner!
Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup fresh pineapple chunks
- 1/4 cup teriyaki sauce
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 carrot, thinly sliced
- 1 zucchini, sliced
- 2 green onions, chopped
- Salt & pepper, to taste
- Aluminum foil (heavy-duty recommended)
Instructions
1. Prep the Foil
- Preheat oven to 400°F (200°C) or heat grill to medium-high.
- Tear 2 large sheets of foil (about 12×15 inches each).
- Lightly spray or brush with olive oil to prevent sticking.
2. Build the Packets
- Slice chicken breasts into halves or thick strips (optional, for faster cooking).
- Season chicken with salt & pepper.
- Place chicken in the center of each foil sheet.
- Divide the pineapple, bell pepper, carrot, zucchini, and green onions over the top.
- Drizzle each packet with:
- 1/2 tablespoon olive oil
- 2 tablespoons teriyaki sauce
- Fold the foil over the mixture and seal tightly.
3. Cook
- Oven: Bake 25–30 minutes
- Grill: Grill 20–25 minutes, flipping halfway
Chicken should reach 165°F and vegetables should be tender.
4. Serve
Open packets carefully (steam!), then serve the chicken and veggies over:
