Ingredients
 4 boneless, skinless chicken breasts
 2 tablespoons olive oil
 1 teaspoon garlic powder
 1 teaspoon paprika
 Salt and pepper to taste
 1 medium onion, thinly sliced
 1 cup mushrooms, sliced
 4 slices provolone cheese or mozzarella
 2 tablespoons butter
 2 tablespoons all-purpose flour
 1.5 cups chicken broth
Steps
Season chicken breasts with garlic powder, paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken on each side for about 4–5 minutes until golden brown without fully cooking.
Melt butter in the same skillet. Add sliced onions and mushrooms. Cook over medium heat, stirring occasionally, until soft and caramelized for about 8–10 minutes.
Sprinkle flour over the onions and mushrooms. Stir to coat. Cook for 1 minute, then slowly pour in chicken broth while whisking constantly until a smooth gravy forms. Simmer until thickened.
Preheat oven to 375°F (190°C). Arrange seared chicken breasts in a baking dish. Spoon the onion-mushroom mixture over the chicken. Place a slice of cheese on top of each chicken breast. Pour gravy over everything. Cover with foil and bake for 20–25 minutes, until chicken is cooked and cheese is melted.
