Instructions
1. Marinate the Chicken
In a large bowl, combine yogurt, lemon juice, garam masala, turmeric, cumin, chili powder, and salt.
Add chicken chunks and mix until fully coated.
Cover and marinate for at least 30 minutes (up to overnight for deeper flavor).
2. Cook the Chicken
Heat a large skillet or pan over medium-high heat.
Add a little oil if needed.
Add marinated chicken in a single layer and cook for 6–8 minutes, turning occasionally, until lightly charred and mostly cooked through.
Remove chicken from pan and set aside.
3. Build the Sauce Base
In the same pan, reduce heat to medium.
Add butter and oil.
Add diced onion and sauté for 5–6 minutes until soft and lightly golden.
Stir in garlic and ginger and cook for 30–60 seconds until fragrant.
4. Bloom the Spices
Add ground cumin, paprika, chili powder, and sugar.
Stir continuously for 30 seconds to toast the spices and deepen flavor.
5. Simmer the Sauce
Pour in the tomato purée and stir well.
Simmer uncovered for 10–12 minutes, stirring occasionally, until the sauce thickens slightly and deepens in color.
Season with salt to taste.
6. Make It Velvety
Lower heat and slowly stir in the heavy cream.
Mix until the sauce becomes smooth, rich, and silky.
Add the cooked chicken back into the sauce and simmer gently for 8–10 minutes, until the chicken is tender and fully cooked.
7. Serve
Remove from heat and let rest for 5 minutes.
Serve hot with crispy golden fries on the side.
Garnish with fresh cilantro if desired.
