Ingredients (W-W Lightened Version – 2 bowls)
Chicken & Bowls
- 2 large chicken breasts
- 4 cups broccoli florets
- 1 tbsp olive oil (or 0-point spray)
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp onion powder
- ½ tsp Italian seasoning
- Salt & pepper
- Optional: 1 tbsp lemon juice
Light Creamy Garlic Sauce (W-W)
- ¼ cup nonfat Greek yogurt
- 2 tbsp light mayo
- 2 tbsp skim milk (instead of heavy cream)
- 1 clove garlic, minced
- 1 tsp lemon juice
- ½ tsp Dijon mustard
- 1 tbsp grated Parmesan
- Salt & pepper
This gives you the same creamy flavor with a fraction of the points.
How to Make It (W-W Version)
1. Cook the Chicken
- Mix olive oil (or spray), garlic powder, paprika, onion powder, Italian seasoning, salt & pepper.
- Coat chicken well.
- Grill 4–5 minutes per side or pan-sear.
- Slice into strips.
2. Cook the Broccoli
Steam OR roast at 425°F for 15 minutes.
Both are 0 points.
3. Make the Light Garlic Sauce
Whisk together:
Greek yogurt
light mayo
skim milk
minced garlic
lemon juice
Dijon
Parmesan
salt + pepper
Let chill 10 minutes so flavors deepen.
4. Assemble the Bowls
Each bowl gets:
- 2 cups broccoli
- ½ the grilled chicken
- 2–3 tbsp light garlic sauce
Optional low-point add-ons:
parsley, chili flakes, lemon squeeze
