Spicy Honey Pepperoni Pizza Roll-Ups
Ingredients:
4 large flour tortillas
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded provolone (optional but so good)
1 cup sliced pepperoni
1/2 cup pizza sauce (plus extra for dipping)
1 tablespoon olive oil or melted butter
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
For the spicy honey:
1/4 cup honey
1/2 to 1 teaspoon red pepper flakes (adjust to your heat preference)
Tiny splash of apple cider vinegar (optional, but balances it nicely)
Instructions:
Preheat your oven to 400 degrees. Line a baking sheet with parchment paper.
In a small bowl, warm the honey slightly in the microwave (about 15 seconds), then stir in red pepper flakes and a tiny splash of vinegar if using. Set aside so the flavors can blend.
Lay out your tortillas. Spread a thin layer of pizza sauce over each one, leaving a little space around the edges.
Sprinkle mozzarella and provolone evenly over the sauce. Add a single layer of pepperoni across the surface. Don’t overfill or they’ll be hard to roll.
Roll each tortilla up tightly like a burrito. Place seam-side down on the baking sheet.
Brush the tops lightly with olive oil or melted butter. Sprinkle with garlic powder and Italian seasoning.
Bake for 12–15 minutes, until golden and slightly crisp. If you want them extra crispy, broil for 1–2 minutes at the end, watching closely.
Let them cool for a few minutes, then slice into rounds. Drizzle with the spicy honey and serve with warm pizza sauce for dipping.
