- Low-calorie cooking spray (0 Points)
For the Filling:
- 6 tbsp light cream cheese (12 Points total)
- 2 tbsp powdered sugar substitute (0 Points if using Stevia, Monkfruit, etc.)
- ½ tsp vanilla extract (0 Points)
- Optional: fresh fruit (berries are 0 Points)

Make the crepes:
- In a blender or bowl, whisk flour, milk, eggs, vanilla, and salt until smooth.
- Let batter rest 10 minutes.
- Heat a nonstick pan, lightly spray with cooking spray, and pour in ¼ cup batter. Swirl thinly.
- Cook 1–2 minutes, flip, then cook 30 seconds more. Repeat.

Make the cream cheese filling:
- In a small bowl, beat together light cream cheese, sugar substitute, and vanilla until smooth and creamy.

- Spread 1 tbsp of cream cheese filling onto each crepe.
