WW-Friendly Hamburger Rice Casserole

Ingredients (6 servings):

  • 1 lb (450 g) extra-lean ground beef (96% lean, or swap for ground turkey/chicken for fewer points)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked brown rice (or cauliflower rice for ultra-low points)
  • 2 cups low-sodium beef broth (or chicken broth)
  • 1 cup canned diced tomatoes (no salt added)
  • 1 cup bell peppers, chopped
  • 1 cup carrots, diced
  • 1 cup mushrooms, sliced (optional)
  • 1 tsp paprika
  • 1 tsp Italian seasoning (or oregano & thyme)
  • Salt & pepper to taste
  • ½ cup reduced-fat shredded cheddar cheese (optional topping)

Instructions:

  1. Cook Meat → In a large skillet, cook ground beef (or turkey) over medium heat until browned. Drain any fat. Add onion and garlic, cook 2–3 minutes.
  2. Combine Ingredients → Stir in rice, broth, tomatoes, peppers, carrots, mushrooms, and seasonings.
  3. Simmer → Bring to a boil, then reduce heat, cover, and simmer for 25–30 minutes, or until rice is tender. (If using cauliflower rice, reduce cooking time to 10–12 minutes.)
  4. Top & Serve → Sprinkle with reduced-fat cheese before serving (optional).

  • Swap brown rice with cauliflower rice → saves 3–4 points per serving.
  • Use extra-lean beef or ground turkey breast → keeps it light but still hearty.
  • Keep the cheese light or skip it entirely for fewer points.
