Ingredients (6 servings):
- 1 lb (450 g) extra-lean ground beef (96% lean, or swap for ground turkey/chicken for fewer points)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup uncooked brown rice (or cauliflower rice for ultra-low points)
- 2 cups low-sodium beef broth (or chicken broth)
- 1 cup canned diced tomatoes (no salt added)
- 1 cup bell peppers, chopped
- 1 cup carrots, diced
- 1 cup mushrooms, sliced (optional)
- 1 tsp paprika
- 1 tsp Italian seasoning (or oregano & thyme)
- Salt & pepper to taste
- ½ cup reduced-fat shredded cheddar cheese (optional topping)
Instructions:
- Cook Meat → In a large skillet, cook ground beef (or turkey) over medium heat until browned. Drain any fat. Add onion and garlic, cook 2–3 minutes.
- Combine Ingredients → Stir in rice, broth, tomatoes, peppers, carrots, mushrooms, and seasonings.
- Simmer → Bring to a boil, then reduce heat, cover, and simmer for 25–30 minutes, or until rice is tender. (If using cauliflower rice, reduce cooking time to 10–12 minutes.)
- Top & Serve → Sprinkle with reduced-fat cheese before serving (optional).
