Ingredients

For the Meatloaf:

  • 2 lbs ground chicken
  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 tsp garlic powder
  • 1/2 tsp onion powder (optional, adds depth)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup milk (optional, keeps it extra moist)

For the Glaze (optional):

  • 1/2 cup ketchup or tomato sauce
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce

Instructions

  1. Preheat oven:
    Set oven toย 375ยฐF (190ยฐC). Line a loaf pan with parchment paper or lightly grease it.
  2. Mix meatloaf ingredients:
    In a large bowl, combine ground chicken, Parmesan, panko, eggs, minced garlic, garlic powder, salt, pepper, and milk (if using). Mix until just combinedโ€”donโ€™t overmix or meatloaf will be dense.
  3. Shape & add glaze:
    Transfer mixture to loaf pan and shape into a loaf.
    If using glaze, mix ketchup, mustard, and Worcestershire sauce, then spread evenly over the top.
  4. Bake:
    Bake forย 50โ€“60 minutes, until the meatloaf reaches an internal temperature ofย 165ยฐF (74ยฐC)ย and the top is golden.
  5. Rest & serve:
    Let the meatloaf rest forย 10 minutesย before slicing. Serve with your favorite sides like mashed potatoes, roasted veggies, or a fresh salad.
