Ingredients
For the Meatloaf:
- 2 lbs ground chicken
- 1 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 2 large eggs
- 4 cloves garlic, minced
- 1 tsp garlic powder
- 1/2 tsp onion powder (optional, adds depth)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup milk (optional, keeps it extra moist)
For the Glaze (optional):
- 1/2 cup ketchup or tomato sauce
- 1 tbsp Dijon mustard
- 1 tsp Worcestershire sauce

Preheat oven:
Set oven toย 375ยฐF (190ยฐC). Line a loaf pan with parchment paper or lightly grease it. -
Mix meatloaf ingredients:
In a large bowl, combine ground chicken, Parmesan, panko, eggs, minced garlic, garlic powder, salt, pepper, and milk (if using). Mix until just combinedโdonโt overmix or meatloaf will be dense. -
Shape & add glaze:
Transfer mixture to loaf pan and shape into a loaf.
If using glaze, mix ketchup, mustard, and Worcestershire sauce, then spread evenly over the top. -
Bake:
Bake forย 50โ60 minutes, until the meatloaf reaches an internal temperature ofย 165ยฐF (74ยฐC)ย and the top is golden. -
Rest & serve:
Let the meatloaf rest forย 10 minutesย before slicing. Serve with your favorite sides like mashed potatoes, roasted veggies, or a fresh salad.
