๐ฅ Ingredients:
- 1 tbsp butter or olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 cups cooked chicken, shredded or diced
- 3 cups chicken broth
- 1 1/2 cups corn (frozen, canned, or fresh)
- 2 medium potatoes, peeled and diced
- 1 cup milk (or half-and-half for extra creaminess)
- 1/2 cup shredded cheddar cheese (optional, but delicious!)
- Salt and pepper, to taste
- Fresh parsley or green onions, for garnish

- Sautรฉ the veggies:
In a large pot, heat the butter or oil over medium heat. Add onions and cook until soft (about 4โ5 minutes). Add garlic and stir for another 30 seconds. - Add potatoes & broth:
Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes). - Add corn & chicken:
Stir in the corn and cooked chicken. Let it simmer for another 5โ10 minutes. - Make it creamy:
Stir in the milk and cheese (if using). Cook until heated through and cheese is melted. Season with salt and pepper to taste. - Serve it up:
Ladle into bowls and garnish with chopped parsley or green onions.

- A dash of hot sauce or smoked paprika for a kick
- Crumbled bacon on top for extra indulgence
- A dollop of sour cream for tang
