Hearty, cheesy, and veggie-loaded—this low-carb casserole is perfect for a satisfying family dinner!
Ingredients (Serves 4–6):
1 lb ground beef
2 medium zucchinis, sliced or chopped
½ cup onion, diced
1 cup sugar-free marinara sauce
½ cup full-fat sour cream or cream cheese
1 cup shredded mozzarella
¼ cup grated Parmesan
1 tsp garlic powder
Salt & pepper to taste
Instructions:
Step 1: Preheat Oven
Set oven to 375°F (190°C). Grease a medium casserole dish.
Step 2: Cook Beef & Veggies
In a skillet, brown ground beef with onion. Drain excess fat. Add zucchini, garlic powder, salt, pepper, and cook 3–5 mins until slightly softened.
Step 3: Mix the Base
Stir in marinara and sour cream (or cream cheese). Cook 2–3 more mins until well mixed.
Step 4: Assemble & Bake
Pour mixture into casserole dish. Top with mozzarella and Parmesan.
Step 5: Bake
Bake for 20–25 minutes until bubbly and golden.
Step 6: Cool & Serve
Let rest 5–10 minutes before serving.
