Zucchini & Yellow Squash Au Gratin Recipe

A simple, comforting bake with tender squash and a rich cheesy finish.

Ingredients:

• 2 cups zucchini, thinly sliced

• 2 cups yellow squash, thinly sliced

• 1/2 cup cottage cheese (blended smooth)

• 1/2 cup heavy cream (or milk for lighter option)

• 1 cup shredded mozzarella cheese

• 1/4 cup grated parmesan cheese

• 2 cloves garlic, minced

• 1/2 tsp thyme or Italian seasoning

• Salt & black pepper to taste

Instructions:

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

Pat zucchini and squash dry to remove excess moisture.

In a bowl, mix cottage cheese, cream, garlic, seasoning, salt, and pepper.

Layer squash slices in the baking dish.

Pour the creamy mixture evenly over the top.

Sprinkle mozzarella and parmesan over everything.

Bake for 30–35 minutes until tender and golden on top.

Let rest for 5–10 minutes before serving.
