๐ง Ingredients
- 2 cups finely grated carrots
- 2 cups almond flour (or finely ground almonds)
- 3 large eggs
- โ cup honey or maple syrup
- ยผ cup olive oil or melted coconut oil
- 1 tsp vanilla extract
- 1 tsp baking powder
- ยฝ tsp baking soda
- ยฝ tsp cinnamon
- Pinch of salt
- Optional: ยผ cup chopped walnuts or almonds for topping
๐ฉโ๐ณ Directions
- Preheat oven to 350ยฐF (175ยฐC). Grease a round or bundt pan.
- In a large bowl, whisk eggs, honey (or maple syrup), oil, and vanilla.
- Stir in almond flour, baking powder, baking soda, cinnamon, and salt until smooth.
- Fold in grated carrots.
- Pour into prepared pan and smooth the top. Sprinkle nuts on top if desired.
- Bake 40โ45 minutes, until golden brown and a toothpick comes out clean.
- Cool completely before removing from pan.
๐ Optional Cream Topping
Mix together:
- ยฝ cup Greek yogurt or light cream cheese
- 1 tbsp honey or maple syrup
- A few drops of vanilla or orange zest
