🐔 FOR THE CHICKEN
- 2 boneless, skinless chicken breasts (sliced into strips)
- 2 tbsp honey
- 2 tbsp soy sauce
- 2 tbsp fresh lime juice
- 1 tsp lime zest
- 1 tbsp olive oil
- Salt & pepper, to taste
🍚 FOR THE RICE LAYER
- 1½ cups cooked jasmine or basmati rice
- ½ tbsp rice vinegar (optional)
- Pinch of salt
🥑 FOR THE AVOCADO LAYER
- 1 large ripe avocado, diced
- 1 tbsp lime juice
- Salt & pepper, to taste
🌿 TO ASSEMBLE
- Fresh cilantro, chopped
- Lime wedges for serving
👩🍳 INSTRUCTIONS

Marinate the chicken:
In a bowl, whisk together honey, soy sauce, lime juice, zest, olive oil, salt, and pepper. Add chicken and toss well. Marinate 15–20 minutes. -
Cook the chicken:
Heat a skillet over medium heat. Cook the marinated chicken until golden and cooked through, about 5–6 minutes. -
Prepare the avocado mix:
In a small bowl, toss avocado with lime juice, salt, and pepper. -
Layer the stack:
- Use a round mold or ramekin.
- Add a layer of rice, press gently.
- Spoon avocado on top.
- Finish with the honey lime chicken.
- Lift the mold — and watch that perfect stack!
- Garnish with cilantro and a squeeze of lime. Serve immediately.
