Ingredients
-
1 cup oatmeal (rolled or quick oats)
-
2 apples (peeled or unpeeled, grated or finely chopped)
- 2 eggs
-
150 g yogurt (plain or Greek yogurt)
- 1 tsp baking powder
- Optional: cinnamon, vanilla, nuts, raisins
Instructions
-
Prepare the apples
- Grate both apples (or finely chop).
- If they are very juicy, lightly squeeze—but you can keep most of the moisture.
-
Mix the base
In a bowl, combine:
- oatmeal
- apples
- yogurt
- eggs
- baking powder
- (optional) cinnamon for flavor
Mix until well combined.
-
Rest the batter
Let it sit for 5–10 minutes so the oats absorb moisture.
-
Bake
- Pour mixture into a small baking dish or muffin cups.
- Bake at 180°C (350°F) for 25–30 minutes, until golden and set.
-
Serve
Enjoy warm or cold! Perfect for breakfast, meal prep, or snack.
Tips
- Add nuts for crunch.
- Add chia or flax seeds to boost fiber.
- Stores well in the fridge for 3 days.
- Can also be blended into a smooth batter before baking if you prefer a cake-like texture.
