Ingredients:

  • 2 cups cooked shredded chicken (rotisserie chicken works perfectly)
  • 4 oz cream cheese, softened at room temperature
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup chopped green onions (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder or smoked paprika (optional, for flavor)
  • Salt and pepper, to taste
  • 8โ€“10 small flour or corn tortillas
  • Cooking spray or a little olive oil for brushing

Instructions:

  1. Preheat oven:

  2. Prepare filling:
