🛒 Ingredients
For the Dough:
- 1 cup mashed ripe banana (about 2 large)
- 1 cup warm milk (110°F / 45°C)
- 2¼ tsp active dry yeast (1 packet)
- ½ cup granulated sugar
- ½ cup melted unsalted butter
- 1 large egg
- 4½–5 cups all-purpose flour
- 1 tsp salt
For the Filling:
- ½ cup unsalted butter, softened
- 1 cup brown sugar
- 2 tbsp ground cinnamon
- ½ cup chopped walnuts (optional)
For the Cream Cheese Icing:
- 4 oz cream cheese, softened
- 2 tbsp unsalted butter, softened
- 1 cup powdered sugar
- ½ tsp vanilla extract
- 1–2 tbsp milk (for consistency)
👩🍳 Instructions
- Activate Yeast – In a small bowl, stir yeast into warm milk with 1 tbsp sugar. Let sit 5–10 minutes until foamy.
- Make Dough – In a large mixing bowl, combine mashed banana, melted butter, sugar, egg, and yeast mixture. Mix in flour and salt gradually until a soft dough forms.
- Knead & Rise – Knead dough on a floured surface for 6–8 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise 1 hour or until doubled.
- Roll Out – Punch down dough, then roll into a 16×12-inch rectangle. Spread softened butter over surface. Sprinkle with brown sugar, cinnamon, and walnuts.
- Shape Rolls – Roll up tightly from the long side, then slice into 12 rolls. Place in a greased 9×13-inch pan. Cover and let rise another 30–45 minutes.
- Bake – Preheat oven to 350°F (175°C). Bake rolls for 25–30 minutes, until golden brown.
- Make Icing – Beat cream cheese, butter, powdered sugar, vanilla, and milk until smooth. Spread over warm rolls.
