  • Prep Time: 15 minutes
  • Cook Time: 25 minutes
  • Total Time: 40 minutes

Ingredients List

For the Filling:

  • 1 lb (450 g) lean ground beef (or turkey/chicken for leaner option)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp paprika
  • ½ tsp chili flakes (optional)
  • Salt & black pepper to taste
  • ½ cup (120 ml) tomato sauce or salsa
  • 1 cup (100 g) shredded low-fat mozzarella or cheddar cheese
  • 1 tbsp chopped parsley (optional)

For the Pastry:

  • 1 sheet puff pastry (store-bought or homemade, thawed)
  • 1 egg (beaten, for egg wash)
  • 1 tbsp water

Optional Protein Upgrade:

  • Add 1 scoop (25 g) unflavored whey protein isolate to the beef mixture before stuffing (keeps the texture moist but boosts protein content).

Instructions

Step 1: Prepare the Filling
Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, sauté until fragrant. Add ground beef, cook until browned. Drain excess fat.

Step 2: Season & Simmer
Add tomato sauce, paprika, chili flakes, salt, and pepper. Cook for 3–4 minutes until thickened. Stir in shredded cheese and parsley. Remove from heat and let cool slightly.

Step 3: Prepare the Pastry
Preheat oven to 400°F (200°C). Roll out puff pastry on a lightly floured surface. Cut into equal squares.

Step 4: Fill & Seal
Spoon beef mixture into the center of each square. Fold edges over the filling to form a sealed parcel. Press lightly to secure.

Step 5: Brush & Bake
Place on a parchment-lined baking tray. Brush tops with egg wash for a golden finish. Bake for 20–25 minutes, or until puffed and deep golden brown.

Step 6: Cool & Serve
Let rest for 5 minutes before serving. The cheese inside will be hot and gooey!
