A quick, protein-packed breakfast option with scrambled eggs, ham, and melted cheese wrapped in a warm tortilla. Perfect for a fast breakfast or an easy lunch.

Ingredients:

  • 1 large flour or low-carb tortilla
  • 2–3 scrambled eggs
  • ¼ cup diced savory ham (or crispy bacon!)
  • ½ cup shredded cheddar cheese (or your preferred cheese)
  • Optional: Spinach for added greens or hot sauce for extra flavor!

Instructions:

  1. Prepare the Ingredients:
    • Scramble the eggs to your preference and set them aside.
    • Slice the ham (or bacon) into small pieces.
  2. Assemble the Quesadilla:
    • Place the tortilla flat on a clean surface.
    • Spread the scrambled eggs evenly over half of the tortilla.
    • Add the diced ham and top with shredded cheese.
  3. Cook the Quesadilla:
    • Heat a skillet over medium heat.
    • Fold the tortilla in half to create a half-moon shape, covering the filling.
    • Place the quesadilla in the skillet and cook for about 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden and crispy.
  4. Serve:
