Ingredients:

  • 1/3 head green cabbage, thinly sliced
  • 1/3 head red cabbage, thinly sliced
  • 1–2 cucumbers, thinly sliced
  • 1/2 onion, thinly sliced
  • 1 carrot, julienned or grated
  • 20 g walnuts, roughly chopped
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon salt (for cucumbers)
  • 1/4 teaspoon salt (for cabbage)

Instructions:

  1. Prepare the Vegetables:
    • Sprinkle 1/4 teaspoon salt over the sliced cabbage and set aside for 5–10 minutes. This helps soften it slightly.
    • Sprinkle 1/4 teaspoon salt over cucumber slices and let sit for 5 minutes, then gently squeeze to remove excess water.
  2. Mix Salad:
    • In a large bowl, combine green cabbage, red cabbage, cucumbers, onion, and carrot.
    • Add rice vinegar and toss gently to coat.
  3. Add Crunch:
    • Sprinkle chopped walnuts over the salad and mix lightly.
  4. Serve:
    • Serve immediately as a light, refreshing dinner salad, or chill for 10–15 minutes to let flavors meld.
