Ingredients:
2 large sweet potatoes, peeled and cut into 1-inch cubes
2 tbsp olive oil
2 tbsp pure maple syrup
½ tsp cinnamon
¼ tsp salt
¼ cup crumbled goat cheese
¼ cup chopped toasted walnuts
Fresh thyme or rosemary (optional, for garnish)
Directions:
Preheat Oven:
Set oven to 400°F (200°C) and line a baking sheet with parchment paper.
Season the Sweet Potatoes:
In a bowl, toss the sweet potato cubes with olive oil, maple syrup, cinnamon, and salt until evenly coated.
Roast Until Caramelized:
Spread sweet potatoes in a single layer on the baking sheet.
Roast for 25–30 minutes, flipping halfway through, until tender and golden brown around the edges.
Add Toppings:
Transfer roasted sweet potatoes to a serving dish.
Sprinkle with crumbled goat cheese and toasted walnuts.
Finish & Serve:
Drizzle lightly with extra maple syrup if desired.
Garnish with fresh thyme or rosemary for aroma and color.
