Ingredients List

For the Scalloped Potatoes

  • 2 lbs yellow potatoes, peeled and thinly sliced
  • 1 can (10.5 oz) condensed cream of mushroom soup (or chicken or celery soup)
  • 1 cup milk
  • 1 ½ cups shredded cheddar cheese (divided into 1 cup for sauce and ½ cup for topping)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Instructions

1. Preheat the oven & prepare the baking dish

Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.

2. Make the cheese sauce

In a mixing bowl, combine the cream of mushroom soup, milk, 1 cup of shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Stir until smooth and creamy.

3. Layer the potatoes

Arrange a layer of sliced potatoes on the bottom of the prepared baking dish. Pour a portion of the cheese sauce over the potatoes. Repeat layering potatoes and cheese sauce until all the ingredients are used, finishing with a layer of sauce on top.

4. Top with cheese

Sprinkle the remaining ½ cup of shredded cheddar cheese over the top of the casserole.

5. Bake the dish

Cover the baking dish with aluminum foil and bake for 35–40 minutes. Then remove the foil and bake for an additional 10–15 minutes until the potatoes are tender, the sauce is bubbling, and the cheese is golden and melted.

6. Garnish and serve

Allow the casserole to cool for a few minutes before serving. Garnish with fresh thyme or parsley if desired. Serve hot as a comforting side dish.
