  • 1 cup wild rice (uncooked)
  • 1 lb chicken breast, diced
  • 2 cups mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream (or use half & half for lighter version)
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt & pepper, to taste

  1. Cook the rice:
    Cook wild rice according to package directions until tender. Set aside.
  2. Sautรฉ the aromatics:
    In a large pot, heat olive oil over medium heat.
    Add onion and garlic, and sautรฉ 2โ€“3 minutes until fragrant.
  3. Add mushrooms and chicken:
    Stir in mushrooms and cook until softened.
    Add diced chicken and cook until no longer pink.
  4. Simmer the soup:
    Pour in chicken broth and thyme. Bring to a gentle boil, then reduce heat and simmer 15โ€“20 minutes until flavors meld and chicken is cooked through.
  5. Add cream & rice:
    Stir in cooked wild rice and heavy cream.
    Simmer 5 more minutes until creamy and heated through.
    Adjust salt and pepper to taste.
  6. Serve:
    Ladle into bowls, garnish with fresh thyme or parsley, and enjoy warm.
