๐ง Ingredients
- 1 cup wild rice (uncooked)
- 1 lb chicken breast, diced
- 2 cups mushrooms, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream (or use half & half for lighter version)
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt & pepper, to taste

Cook the rice:
Cook wild rice according to package directions until tender. Set aside. -
Sautรฉ the aromatics:
In a large pot, heat olive oil over medium heat.
Add onion and garlic, and sautรฉ 2โ3 minutes until fragrant. -
Add mushrooms and chicken:
Stir in mushrooms and cook until softened.
Add diced chicken and cook until no longer pink. -
Simmer the soup:
Pour in chicken broth and thyme. Bring to a gentle boil, then reduce heat and simmer 15โ20 minutes until flavors meld and chicken is cooked through. -
Add cream & rice:
Stir in cooked wild rice and heavy cream.
Simmer 5 more minutes until creamy and heated through.
Adjust salt and pepper to taste. -
Serve:
Ladle into bowls, garnish with fresh thyme or parsley, and enjoy warm.
