Chocolate Chip Cookie Bars

Ingredients

  • 1 cup oat flour (or blended oats)
  • ½ cup unsweetened applesauce
  • ⅓ cup brown sugar substitute (or light brown sugar)
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup mini chocolate chips (use sugar-free or reduced-fat for fewer points)

Method

Step 1: Prep

  1. Preheat oven to 180°C / 350°F.
  2. Line an 8×8 baking pan with parchment paper.

Step 2: Mix Wet Ingredients

  1. In a bowl, mix applesauce, egg, vanilla, and sweetener until smooth.

Step 3: Add Dry Ingredients

  1. Add oat flour, baking soda, and salt.
  2. Mix gently until combined.
  3. Fold in chocolate chips.

Step 4: Bake

  1. Spread batter evenly in pan.
  2. Bake 18–22 minutes until set and lightly golden.
  3. Cool completely before cutting into bars.
