Ingredients
For Lemon Garlic Chicken:
- 2 cups chicken breast, cooked & sliced
- 2 tbsp olive oil
- 2 tbsp lemon juice (fresh)
- 1 tsp lemon zest
- 3–4 garlic cloves (minced)
- ½ tsp black pepper
- ½ tsp salt
- ½ tsp paprika
For Salad:
- 3 cups lettuce or mixed greens
- ½ cup cucumber (sliced)
- ½ cup cherry tomatoes (optional)
- ½ cup shredded cheddar or mozzarella cheese
Dressing:
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- Salt & pepper to taste
Method
Step 1: Cook Chicken
- Heat olive oil in pan on medium heat.
- Add garlic, sauté 10 seconds.
- Add chicken, salt, pepper, paprika.
- Cook until golden.
- Add lemon juice & zest, toss well.
- Turn off heat and rest 5 minutes.
Step 2: Prepare Salad
- In large bowl add lettuce, cucumber, tomatoes.
- Add cooked lemon garlic chicken.
- Sprinkle shredded cheese on top.
Step 3: Make Dressing
- Whisk all dressing ingredients together.
- Pour over salad and toss gently.
Serving Tips
- Serve immediately for fresh taste.
- Keto option: skip tomatoes.
- Add olives or avocado (optional).
