Step-by-Step Instructions
Step 1: Prepare Egg Mixture
In a heatproof bowl or double boiler, combine egg yolks, sugar, and 1/2 cup of heavy cream. Place over gently simmering water and whisk constantly. Cook for 7โ10 minutes until thickened, pale, and slightly fluffy. The mixture should reach about 160ยฐF (71ยฐC). Remove from heat.
Step 2: Melt the Chocolate
