4 large egg yolks
1/4 cup (52g) granulated sugar
1 3/4 cups (420ml) heavy whipping cream (divided)
8 oz (226g) semi-sweet chocolate, chopped
3/4 cup (86g) powdered sugar

Step-by-Step Instructions
Step 1: Prepare Egg Mixture
In a heatproof bowl or double boiler, combine egg yolks, sugar, and 1/2 cup of heavy cream. Place over gently simmering water and whisk constantly. Cook for 7–10 minutes until thickened, pale, and slightly fluffy. The mixture should reach about 160°F (71°C). Remove from heat.
Step 2: Melt the Chocolate
Melt the chopped chocolate using a microwave in short intervals (10–15 seconds), stirring in between until smooth. Alternatively, melt it using a double boiler.
Step 3: Combine Chocolate & Egg Base
Add the melted chocolate into the warm egg mixture and whisk until smooth and fully combined. Let it cool to room temperature.
Step 4: Whip the Cream
In a mixing bowl, whip the remaining 1 1/4 cups heavy cream with powdered sugar until stiff peaks form.
Step 5: Fold the Mixture
Gently fold about 1/4 of the whipped cream into the chocolate mixture to lighten it. Then fold the chocolate mixture back into the whipped cream in batches until smooth and airy.
Step 6: Chill the Mousse
Divide the mousse into serving cups. Refrigerate for at least 3–4 hours or overnight until set.
