Preheat & Prepare
Preheat the oven to 190°C / 375°F (Gas Mark 5). Grease four oven-safe ramekins or pudding cups with butter. -
Melt Chocolate & Butter
Place the chocolate and butter in a heatproof bowl set over a pan of gently simmering water. Let melt slowly, then stir until smooth. Remove from heat and set aside. -
Whisk Eggs & Sugar
In a separate bowl, whisk the eggs, caster sugar, and vanilla extract using an electric whisk until thick, pale, and fluffy. -
Combine
Gently fold the melted chocolate mixture into the egg mixture until fully combined. -
Add Flour
Sift the flour over the batter and fold in gently, taking care not to knock out too much air. -
Bake
Divide the mixture evenly between the prepared ramekins. Place them on a baking tray and bake for 12–15 minutes.
The tops should look set, but the puddings should still have a slight wobble in the center. -
Serve Immediately
Serve straight from the oven for that perfect molten middle.
