Total Time: 42 minutes

Ingredients

For the Chocolate Chip Cookies

  • 1 ¼ cups (156 g) all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 7 tbsp (98 g) unsalted butter, room temperature
  • ⅔ cup (133 g) packed light brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 1 cup (170 g) mini chocolate chips (for the dough)

For the Ice Cream Sandwiches

  • ½ gallon vanilla ice cream (homemade or store-bought)
  • 1 cup (170 g) mini chocolate chips (for rolling the sandwiches)

Equipment

  • Kitchen scale
  • Stand mixer or hand mixer
  • Baking sheet
  • Ice cream scoop

Instructions

Chocolate Chip Cookies

  1. Preheat the oven
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the dry ingredients
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Make the cookie dough
In the bowl of a stand mixer, beat the butter, brown sugar, and granulated sugar on medium-high speed until light and fluffy, about 4 minutes. Scrape down the sides of the bowl as needed.
Add the egg and vanilla extract, and beat until well combined, about 20–30 seconds.
  4. Combine with dry ingredients
With the mixer on low, slowly add the flour mixture to the wet ingredients. Be careful not to overmix.
Stir in the mini chocolate chips by hand with a wooden spoon or spatula.
  5. Shape the cookies
Scoop about 2 tablespoons of dough and roll it into a ball. Place each ball on the prepared baking sheet, pressing it down slightly with your hand or the back of a measuring cup.
Ensure the dough balls are about 2 inches apart.
  6. Bake the cookies
Bake for about 10–12 minutes, or until the edges start to turn light brown.
Let them cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
Freeze the cookies for 20–30 minutes before assembling the sandwiches.

Assembly

  1. Prepare the ice cream sandwiches
Scoop about ¼ cup of ice cream onto the bottom side of a frozen cookie.
Top with the flat side of another cookie to form a sandwich. Press gently until the ice cream reaches the edges.
  2. Roll in chocolate chips
Place the mini chocolate chips in a bowl or on a plate. Roll the sides of the sandwich in the chocolate chips for extra crunch.
  3. Freeze the sandwiches
Serve immediately, or wrap the sandwiches tightly in plastic wrap and freeze them for up to 1 month.
For best results, let them harden in the freezer for an hour before wrapping them individually and storing them in an airtight container or zip-top bag.

Additional Notes

  • Freezing Tip: Freezing the cookies before making the sandwiches is essential for maintaining their structure. Soft or warm cookies may break when you press the ice cream in.
  • Custom Toppings: Feel free to roll the sandwiches in chopped nuts, sprinkles, or crushed candy for additional flavor and texture.

Variations

  • Chocolate Chip Twist: Use dark chocolate or milk chocolate chips in the cookies for a different flavor profile.
  • Flavorful Ice Cream: Swap vanilla ice cream for chocolate, strawberry, or any of your favorite flavors!
  • Vegan Option: Use dairy-free butter and plant-based ice cream for a vegan Chipwich.
