This soup is ultra-creamy without heavy cream — thanks to blended cottage cheese, which gives a silky texture + 20–30g protein per serving!
Ingredients
For the Soup Base
- 2 cups shredded cooked chicken (breast preferred)
- 1 tbsp olive oil or butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 large carrots, sliced
- 2 ribs celery, sliced
- 1 cup peas (fresh or frozen)
- 4 cups chicken broth (low-sodium preferred)
- 1 tsp dried thyme or 2–3 fresh sprigs
- 1 tsp black pepper
- ½ tsp salt (adjust to taste)
Creamy High-Protein Cottage Cheese Mixture
- 1 ½ cups cottage cheese (2% or 4% works best)
- ½ cup milk (or chicken broth)
- 1 tbsp cornstarch (for extra thickness)
- Optional: ¼ cup Parmesan for richer flavor
Instructions
1. Sauté the Veggies
- Heat olive oil in a large pot.
- Add diced onions, carrots, and celery.
- Sauté 5–7 minutes until softened.
- Add garlic and cook 1 minute more.
2. Add Chicken + Broth
- Add shredded chicken to the pot.
- Pour in chicken broth.
- Add thyme, salt, and pepper.
- Bring to a gentle boil, then reduce heat and simmer 10 minutes.
3. Blend the Cottage Cheese Cream
In a blender:
- Add cottage cheese
- Add milk (or broth)
- Add cornstarch
- Blend until completely smooth — no chunks.
This creates the creamiest high-protein soup base without heavy cream.
4. Add the Cream to the Soup
- Pour the blended cottage cheese mixture into the pot.
- Stir well.
- Simmer for 5–7 minutes on low heat.
- Add peas and cook another 2 minutes.
The soup will thicken as it heats.
