Ingredients

  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 8 large eggs
  • 1 cup cottage cheese
  • ยผ cup chopped green onions
  • 6 oz mushrooms, sliced
  • 2 tsp minced garlic
  • 1 tsp olive oil
  • 5 slices bacon, cooked and crumbled
  • 1 bell pepper, chopped
  • Salt, to taste

Instructions

  1. Prepare the vegetables
    Heat 1 tsp olive oil in a pan over medium heat.
    Add chopped green onions and bell pepper, sautรฉ for 4 minutes until softened.
    Add mushrooms and cook for another 3 minutes.
    Stir in minced garlic and Italian seasoning (optional), and sautรฉ for 30 seconds until fragrant.
  2. Mix the egg base
    In a large bowl, whisk together 8 eggs and 1 cup cottage cheese until smooth.
    Add shredded cheese, crumbled bacon, and the cooked vegetable mixture.
    Stir to combine, and add salt to taste.
  3. Bake
    Grease a baking pan and pour the mixture into the pan.
    Bake at 375ยฐF (190ยฐC) for 30โ€“35 minutes, or until fully cooked and golden brown on top.
    The center should be set and no longer jiggle when shaken.
  4. Serve & garnish
    Let the bake cool slightly before cutting into slices.
    Garnish with extra chopped green onions for a fresh burst of flavor.
