🌭 Italian Sausage with Peppers & Onions

Juicy sausages cooked with sweet peppers and caramelized onions—great on its own or in a sandwich.

📝 Ingredients

  • 4 Italian sausages (mild or spicy)
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • Salt & black pepper to taste
  • Fresh basil or parsley (optional)
  • Crusty bread or hoagie rolls (optional)

👩‍🍳 Instructions

1️⃣ Brown the Sausages

  • Heat 1 tbsp olive oil in a skillet.
  • Cook sausages over medium heat 8–10 minutes, turning until browned.
  • Remove and set aside.

2️⃣ Cook Peppers & Onions

  • Add remaining olive oil.
  • Cook peppers and onion 6–8 minutes until soft.
  • Add garlic powder, oregano, salt & pepper.

3️⃣ Finish Together

  • Slice sausages or leave whole.
  • Return to pan and cook 5 more minutes until fully cooked.

4️⃣ Serve

  • Garnish with basil/parsley.
  • Serve in hoagie rolls or with rice, pasta, or salad.

🔥 Oven Method

  • Toss peppers/onions with oil & spices on tray.
  • Add sausages.
  • Bake at 200°C (400°F) for 25–30 minutes, turning once.

🥗 Healthier Version

  • Use chicken or turkey Italian sausage.
  • Reduce oil to 1 tbsp.
  • Serve over quinoa or in lettuce wraps.
