- 1 cup sautéed spinach + chopped onion (about 2 cups raw spinach cooked down with ½ small onion)
- A pinch of nutmeg
- ½ cup shredded mozzarella cheese

- Optional: ¼ cup grated Parmesan cheese for extra flavor

Preheat oven:
Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan. -
Prepare spinach mixture:
- In a skillet over medium heat, sauté chopped onion until translucent.
- Add raw spinach and cook until wilted. Let it cool slightly, then squeeze out excess moisture.

Mix the filling:
- In a large bowl, whisk together eggs and cottage cheese until smooth.
- Stir in the sautéed spinach and onion, shredded mozzarella, nutmeg, salt, and pepper. Mix well.

- Pour the mixture into the prepared dish and smooth the top.
- Bake for 35–40 minutes, or until the quiche is set and lightly golden on top.
