Cottage Cheese & Spinach Crustless Quiche

Ingredients:

  • 1 ½ cups cottage cheese
  • 4 large eggs
  • 1 cup sautéed spinach + chopped onion (about 2 cups raw spinach cooked down with ½ small onion)
  • A pinch of nutmeg
  • ½ cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • Optional: ¼ cup grated Parmesan cheese for extra flavor

Instructions:

  1. Preheat oven:
    Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan.
  2. Prepare spinach mixture:
    • In a skillet over medium heat, sauté chopped onion until translucent.
    • Add raw spinach and cook until wilted. Let it cool slightly, then squeeze out excess moisture.
  3. Mix the filling:
    • In a large bowl, whisk together eggs and cottage cheese until smooth.
    • Stir in the sautéed spinach and onion, shredded mozzarella, nutmeg, salt, and pepper. Mix well.
  4. Assemble and bake:
    • Pour the mixture into the prepared dish and smooth the top.
    • Bake for 35–40 minutes, or until the quiche is set and lightly golden on top.
  5. Cool and serve:
    • Let the quiche cool for 5–10 minutes before slicing.
    • Serve warm or at room temperature.
