🥗 Ingredients (makes ~12 squares)

  • 2 cups old-fashioned oats
  • ½ cup almond flour
  • ½ cup chopped almonds
  • ½ cup dried cranberries
  • ¼ cup honey or maple syrup
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • Optional: pinch of salt

👩‍🍳 Directions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix dry ingredients: In a large bowl, combine oats, almond flour, chopped almonds, cranberries, cinnamon, and a pinch of salt (if using).
  3. Mix wet ingredients: In a small bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract.
  4. Combine: Pour the wet ingredients into the dry ingredients and stir until fully combined. The mixture should be sticky but manageable.
  5. Press into pan: Transfer the mixture to the prepared baking pan and press it firmly and evenly into the pan.
  6. Bake: 20–25 minutes, or until golden brown around the edges.
  7. Cool and cut: Let the pan cool completely before slicing into 12 squares. Store in an airtight container at room temperature for 3–4 days or in the fridge for up to a week.
