🥗 Ingredients (makes ~12 squares)
- 2 cups old-fashioned oats
- ½ cup almond flour
- ½ cup chopped almonds
- ½ cup dried cranberries
- ¼ cup honey or maple syrup
- ¼ cup melted coconut oil
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- Optional: pinch of salt
👩🍳 Directions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Mix dry ingredients: In a large bowl, combine oats, almond flour, chopped almonds, cranberries, cinnamon, and a pinch of salt (if using).
- Mix wet ingredients: In a small bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract.
- Combine: Pour the wet ingredients into the dry ingredients and stir until fully combined. The mixture should be sticky but manageable.
- Press into pan: Transfer the mixture to the prepared baking pan and press it firmly and evenly into the pan.
- Bake: 20–25 minutes, or until golden brown around the edges.
- Cool and cut: Let the pan cool completely before slicing into 12 squares. Store in an airtight container at room temperature for 3–4 days or in the fridge for up to a week.
