Ingredients
- 2 cups shredded cabbage (green or Napa)

Dressing
- 2 tbsp mayonnaise or Greek yogurt (lighter option)
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar or lemon juice
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Add cabbage, cucumber, bell pepper, and green onions to a large bowl.
- In a small bowl, whisk together all dressing ingredients until smooth.
- Pour dressing over vegetables and toss well.
- Sprinkle with dill or parsley if using.
- Chill 10–15 minutes for best flavor, or eat immediately.
