Ingredients:
2 medium sweet potatoes (washed, skin on)
2 tablespoons olive oil or melted butter
2 garlic cloves (thinly sliced)
1 tablespoon chopped fresh parsley (or ½ tsp dried herbs)
Salt and black pepper to taste
Optional: a pinch of chili flakes or paprika
Instructions:
Preheat oven to 400°F (200°C).
Prepare the potatoes:
Place a potato between two chopsticks or wooden spoons.
Slice across the potato about ⅛ inch apart — the chopsticks will stop the knife so you don’t cut all the way through.
Add garlic:
Gently insert thin garlic slices between some of the cuts.
Season:
Mix olive oil, salt, pepper, and herbs.
Brush this mixture generously over the potatoes, making sure it goes between the slices.
Bake:
Place on a baking tray and bake for 45–55 minutes, or until tender inside and crispy on the edges.
Halfway through, brush again with the oil mixture for extra crispiness.
Serve hot — perfect with grilled chicken, steak, or on its own!
