Ingredients:
4 cups red potatoes, cut into chunks
1 lb chicken breast, cut into bite-sized pieces
1 lb beef sausage, sliced into 1-inch pieces
1 cup broccoli florets
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 medium red onion, cut into chunks
1/4 cup olive oil
Salt and pepper, to taste
1 tbsp garlic powder
1 tbsp onion powder
1 tsp paprika
1 tsp dried oregano
1 cup shredded cheddar cheese
1/4 cup chopped fresh parsley
Directions:
Preheat oven to 400°F.
In a large bowl, combine olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper.
Add potatoes, chicken, sausage, broccoli, bell peppers, and onion to the bowl. Toss to coat evenly with the seasoning mixture.
Transfer the mixture to a greased baking sheet, spreading it out in an even layer.
Bake for 35-40 minutes, or until the potatoes are tender and the chicken is cooked through, stirring halfway through.
Remove from oven, sprinkle shredded cheddar cheese over the top, and return to the oven for 5 minutes, or until the cheese is melted.
Garnish with chopped parsley before serving.
