Ingredients

For the Beef Roast

  • 1.5 kg (3 lbs) beef chuck roast
  • 2 tbsp olive oil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Salt & freshly cracked black pepper, to taste

Garlic Butter Gravy & Vegetables

  • 60g (ยผ cup) unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 cup (250ml) beef broth or bone broth
  • 2 tbsp Worcestershire sauce
  • 3 large carrots, peeled and cut into chunks
  • 4โ€“5 medium potatoes, peeled and quartered
  • 1 tbsp cornstarch mixed with 2 tbsp cold water (optional, for thick gravy)
  • Fresh parsley, finely chopped

Instructions

1. Sear the Beef

Pat the chuck roast completely dry using paper towels.

Season generously with salt, black pepper, garlic powder, and onion powder.

Heat olive oil in a large Dutch oven or deep skillet over medium-high heat.

Sear the roast for 4โ€“5 minutes per side until deeply golden brown. Remove and set aside.

2. Build the Flavor Base

In the same pot, pour in the beef broth and Worcestershire sauce. Scrape up all the flavorful browned bits from the bottom.

Stir in the melted butter and minced garlic.

3. Slow Cook Until Tender

Return the beef roast to the pot and arrange the potatoes and carrots around it.

Cover tightly with a lid.
