Ingredients
- 1 onion, chopped
- 1 tbsp olive oil
- 2 leeks, chopped
- 2 celery stalks, chopped
- 1 carrot, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 2 potatoes, diced
- 2 garlic cloves, minced
- 6 cups vegetable or chicken broth
- Salt & black pepper to taste
- ½ tsp turmeric (optional for digestion)
- Fresh parsley or coriander
Instructions
- Heat olive oil in a pot.
- Add onion, leek, celery → sauté 5 minutes.
- Add garlic, carrot, pepper, zucchini, potatoes.
- Pour broth and simmer 20–25 minutes.
- Season with salt, pepper, herbs.
Blend half the soup if you like it creamy.

Add one:
- 1 cup boiled lentils (daal)
- 1 cup shredded chicken
- ½ cup Greek yogurt stirred in at the end
