Ingredients

  • 1 onion, chopped
  • 1 tbsp olive oil
  • 2 leeks, chopped
  • 2 celery stalks, chopped
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 2 potatoes, diced
  • 2 garlic cloves, minced
  • 6 cups vegetable or chicken broth
  • Salt & black pepper to taste
  • ½ tsp turmeric (optional for digestion)
  • Fresh parsley or coriander

Instructions

  1. Heat olive oil in a pot.
  2. Add onion, leek, celery → sauté 5 minutes.
  3. Add garlic, carrot, pepper, zucchini, potatoes.
  4. Pour broth and simmer 20–25 minutes.
  5. Season with salt, pepper, herbs.

Blend half the soup if you like it creamy.


💪 Make It High-Protein (More Filling!)

Add one:

  • 1 cup boiled lentils (daal)
  • 1 cup shredded chicken
  • ½ cup Greek yogurt stirred in at the end
