Ingredients

  • 2 potatoes, diced
  • 1 carrot, chopped
  • 1 bell pepper, chopped
  • 2 cups shredded cabbage
  • 2 celery stalks, chopped
  • 1 small onion (optional)
  • 1 tbsp olive oil
  • 4–5 cups water or low-sodium broth
  • Salt, black pepper
  • ½ tsp turmeric or cumin (optional)

Instructions

  1. Heat olive oil in a pot.
  2. Sauté onion and celery 3–4 minutes.
  3. Add carrot, pepper, cabbage, potatoes.
  4. Pour water/broth.
  5. Simmer 20–25 minutes until tender.
  6. Season and serve.
