Ingredients
- 2 potatoes, diced
- 1 carrot, chopped
- 1 bell pepper, chopped
- 2 cups shredded cabbage
- 2 celery stalks, chopped
- 1 small onion (optional)
- 1 tbsp olive oil
- 4–5 cups water or low-sodium broth
- Salt, black pepper
- ½ tsp turmeric or cumin (optional)
Instructions
- Heat olive oil in a pot.
- Sauté onion and celery 3–4 minutes.
- Add carrot, pepper, cabbage, potatoes.
- Pour water/broth.
- Simmer 20–25 minutes until tender.
- Season and serve.
