Ingredients
For the Sauce:
- 1 tablespoon oil (vegetable or olive)
- ½ small onion, chopped
- 2 cloves garlic, minced
- 1 can (7 oz) diced green chiles (or use roasted fresh Hatch green chiles if available)
- 1½ cups tomatillo salsa (store-bought or homemade)
- Salt, to taste
For the Chilaquiles:
- 6–8 corn tortillas, cut into triangles (or about 5 cups sturdy tortilla chips)
- Oil for frying (if using fresh tortillas)
- 1½ to 2 cups shredded cheese (cheddar, Monterey Jack, queso Oaxaca, or a blend)
- 2 tablespoons chopped cilantro (optional)
Optional Toppings:
- Fried or scrambled eggs
- Sliced avocado
- Mexican crema or sour cream
- Pickled red onions
- Crumbled queso fresco
- Hot sauce or salsa verde

1. Prepare the Tortilla Chips (if not using store-bought)
- Heat oil in a skillet over medium-high heat.
- Fry tortilla wedges in batches until golden and crispy. Drain on paper towels and lightly salt. Set aside.
2. Make the Green Chile Sauce
- In a medium skillet or saucepan, heat 1 tablespoon oil over medium heat.
- Add the onion and sauté until soft and translucent, about 4–5 minutes.
- Add garlic and cook for 30 seconds.
- Stir in green chiles and tomatillo salsa. Simmer for 5 minutes. Taste and season with salt as needed.
3. Assemble the Chilaquiles
- Preheat oven broiler (if melting cheese on top) or preheat oven to 375°F.
- In a large oven-safe skillet or baking dish, combine tortilla chips with warm green chile sauce. Toss gently to coat — chips should be slightly softened but not soggy.
- Sprinkle generously with shredded cheese.
4. Melt the Cheese
- Place under the broiler for 3–4 minutes or bake for 10 minutes, until cheese is melted and bubbly.
5. Serve
Top with eggs and your choice of garnishes. Serve immediately while hot and gooey.
Tips
- For softer chilaquiles, simmer the chips in sauce a little longer before adding cheese.
- Use day-old tortillas for frying; they’re sturdier and crisp up better.
- Add cooked shredded chicken, chorizo, or black beans for a heartier meal.
