Ingredients
Garlic Soup
50 garlic cloves, peeled
2 large onions, diced
2 tbsp olive oil
3 cups diced stale bread (or toasted bread cubes)
6 cups chicken broth
Salt & black pepper, to taste
Optional: Fresh parsley for garnish
Instructions
Sauté the garlic and onions
Heat olive oil in a large pot over medium heat. Add diced onions and cook for 4–5 minutes until soft and translucent. Add garlic cloves and cook for another 2–3 minutes until fragrant.
Add broth and simmer
Pour in the chicken broth and bring to a gentle boil. Reduce heat and simmer for 15–20 minutes until garlic becomes very soft and tender.
Add bread cubes
Stir in diced stale bread and let simmer for another 5–10 minutes. The bread will absorb the broth and help thicken the soup.
Blend (optional)
For a smoother texture, use an immersion blender to blend slightly. You can leave it chunky or blend until creamy depending on preference.
Season and serve
Season with salt and pepper to taste. Serve hot and garnish with fresh parsley if desired.
