Ingredients
- 1 ½ cups shredded mozzarella cheese

- 12–15 slices pepperoni (or turkey pepperoni)
- 2–3 tablespoons sugar-free pizza sauce (optional, for dipping or a thin layer)
Instructions
- Preheat oven: Set to 400°F (200°C). Line a baking sheet with parchment paper.
- Form cheese bases: Place 1 tablespoon of shredded mozzarella (mixed with a little Parmesan if using) in small mounds on the sheet. Flatten slightly into circles, leaving space between each.
- Season: Sprinkle with Italian seasoning and garlic powder.
- Add toppings: Place 1 slice of pepperoni on each mound. (If you want sauce inside, add a tiny dab in the middle before topping with pepperoni — don’t add too much or they’ll go soggy.)
- Bake: Cook 8–10 minutes until edges are golden and bubbly.
- Cool to crisp: Let sit on the pan 5 minutes — they’ll crisp up as they cool.
