Ingredients
- 2 large potatoes (or sweet potatoes, peeled & cut into thin chips/wedges)
- Low-calorie cooking spray
- 1 tsp smoked paprika
- 1 tsp garlic granules
- Salt & black pepper
- 80g reduced-fat cheddar or mozzarella (2 x Healthy Extra A)
- 6 slices lean ham, chicken, or turkey bacon, chopped (Free)
- 1 small onion, finely sliced
- 1 handful mushrooms, sliced
- 4 cherry tomatoes, halved
- Fresh basil or oregano (optional)
Method
- Preheat oven to 200°C (fan 180°C).
- Cut potatoes into chips, spray with low-calorie spray, season with paprika, garlic, salt & pepper. Bake 25–30 minutes until golden and crisp.
- Once cooked, scatter chips into an ovenproof dish.
- Top with onion, mushrooms, ham (or bacon), and tomatoes.
- Sprinkle with cheese, then return to oven for 5–10 minutes until melted and bubbling.
- Finish with fresh basil or oregano before serving.

✅ Can also be made with butternut squash or carrot fries for even lighter chips.
